Seafood – either you are allergic to them or you love them. Whether baked, fried or grilled, any type of seafood is a hearty meal when cooked correctly. Fish, crab, shrimp, and other seafood are great on the grill, so next time you’re barbecuing, try these delicious seafood dishes.

Pineapple and Salmon Festival

What do you need:

  • 4 salmon fillets with skin

  • 1 1/2 cups of fresh pineapple, chopped

  • 1/4 of onion chopped

  • Juice of 3 lemons, divided

  • 2 tablespoons of extra virgin olive oil

  • 1 tablespoon chopped fresh coriander

  • 1 teaspoon of honey

  • Kosher salt

  • Black pepper

Combine pineapple, onion, juice of 1 lime, coriander, salt, and pepper in a bowl. Set aside. Combine the juice of 2 limes, oil and honey in a bowl. Spread the steaks with the mixture and then cook on a preheated grill over medium high heat for 5 to 6 minutes per side or until cooked through. Let cool a few minutes before serving with the pineapple mixture.

Grilled Shrimp Surprise Package

What do you need:

  • 3/4 kilo of shrimp, peeled and deveined

  • 1/4 pound red bliss potatoes, chopped into 1-inch pieces

  • 2 smoked sausages, thinly sliced

  • 2 ears of corn, cut crosswise into 4 pieces

  • 1 lemon, thinly sliced

  • 2 garlic cloves, minced

  • 4 tablespoons of butter

  • 2 tablespoons chopped fresh parsley leaves

  • 2 tablespoons of extra virgin olive oil

  • 1 tablespoon Old Bay seasoning

  • Kosher salt

  • Black pepper

Prepare sturdy aluminum foil. Divide the shrimp, potatoes, hot dogs, corn and garlic between 4 sheets. Spoon 1 tablespoon of butter into each, drizzle with olive oil, then season with Old Bay seasoning, salt, and pepper. Top each mixture with lemon wedges and parsley. Fold the foil over the mixture to create a package, then cook on a preheated grill over high heat for 10 to 15 minutes or until cooked through. Serve immediately.

Quick Grilled Lemon Squid

What do you need:

  • 1/2 kilo of squid, cleaned and cut lengthwise to open flat

  • 1 tablespoon fresh lemon juice

  • 1 tablespoon fresh parsley

  • 1 tablespoon of extra virgin olive oil

  • 1/4 teaspoon of salt

  • 1/8 teaspoon ground black pepper

  • Lemon slices for garnish

Combine the lemon juice, olive oil, salt, and pepper in a large bowl and then add the calamari to the mixture to coat. Thread onto skewers (thread tentacles onto separate skewers if squid are large) then cook on a preheated grill over high heat until cooked through, about 2 to 3 minutes per side. Transfer to a serving platter, top with parsley, and garnish with lemon wedges to serve.
