Grilled Salmon Tacos – Doesn’t Affect Your Diet

Ingredients:

For the Sauce:

• 2 teaspoons chopped chipotle chili, canned in adobo sauce (about 1 chili)

• 2 tablespoons nonfat buttermilk

• 2 tablespoons chopped fresh coriander

• 1/2 cup fat-free mayonnaise

For the tacos:

• 8 white corn tortillas (6 inches)

• 4 cups of shredded green cabbage

• 4 servings of salmon on cedar planks with a touch of barbecue spices

• 1/3 cup chopped green onions

• 1 cup diced seedless tomato (about 2 tomatoes)

• 3 tablespoons fresh lemon juice

Cook the food:

1. Preheat oven to 250 Fahrenheit.

2. Have a shallow rectangular baking dish and lightly grease the inside. Keep it aside, you will use it later.

3. In a bowl, mix the chopped cilantro, mayonnaise, chopped chipotle, and buttermilk. Mix well until all ingredients are covered in mayonnaise.

4. Cut cedar plank grilled salmon into 1-inch pieces and spread on greased baking sheet and cover tightly with foil.

5. When ready, proceed to wrap the corn tortillas in aluminum foil and seal.

6. Place the grilled salmon and corn tortillas in the oven and bake for about 15 minutes.

7. In another bowl, toss shredded cabbage and chopped onions with lime juice. Mix it well.

8. Remove fish and corn tortillas from oven when done.

9. Before serving, divide the salmon into 8 parts, take a tortilla and spread the sauce in the middle. Place a portion of the fish over the sauce and top with the cabbage-onion mixture and the diced tomatoes. Fold it in half and serve immediately. Repeat with remaining corn tortillas.
