  • 2 cups of mineral water

  • 3/4 cup sugar

  • 8 cups pear juice, cooled

  • 1/4 cup plus 1 tablespoon lemon juice

  • 1 1/2 teaspoons ground ginger

  • Ice

  • Candied ginger to decorate

To make the syrup, combine the ginger, water, and sugar in a saucepan, then bring to a boil. Lower the heat then simmer for 30 minutes or until reduced to a syrup. Remove from heat and let cool. When cool, mix with pear juice, lemon juice, and ground ginger. Add mineral water to the punch and stir. Cover with ice. Place candied ginger on toothpicks to garnish your cocktail glasses.
