Cleaning the Chitterlings

1. Soak the casings in a pot of cold water for at least 20 minutes.

2. With your hands, you want to gently unroll the casings. To clean, you’ll use your fingers and a knife to remove all remaining fat and anything else that might cause your guts to smell bad.

3. Once this is done, you will put the guts in a large pot with water along with baking soda and let it boil. Once it starts to boil, remove from heat.

4. Pass the guts through a strainer and add cold water

5. Once this is done, you will do another gut cleaning
